Winter White Seafood Bisque

If you are obsessed with total dining experiences then you will understand that planning menu and tablescaping go hand in hand for me. How fun this recipe for my Winter White Seafood Bisque to go with a "winter white" tablescape. If you know anything about me, you know that simplicity and elegance go hand-in-hand, this recipe is a masterpiece that will definetly impress, but the preparation doesn't require a "top chef" skills. Don't tell, that's our secret!

Black Pepper, Curry, Turmeric, Cinnamon, Sumac, Cumin, Thyme, Lime, Sea Salt, Parsley, Herbs & Spices

Serves 6 – 8

INGREDIENTS

1lb Butter Potatoes
D Sea Salt, For Boiling
D Sea Salt and Pepper Freshly Ground
2 Leeks, White and Pale Green Parts Only
¼C Onion, Finely Chopped
2T Shallots
1t artSAVOR 21
1t artSAVOR 75, Already mixed with olive oil
2T Olive Oil
3C Whole Milk
5 Thyme Sprigs
D Sea Salt
2lb Halibut
1lb Scallops
¼C Pomegranate, For Garnish, Optional
¼C Pistachios
Fresh Mint leaves, For Garnish, Optional

KITCHEN ESSENTIALS

Medium Sized Pot
Immersion Hand Blender

DIRECTIONS

In pot, add potatoes, cold water to cover them and salt
Cook for 12-15 minutes, drain and set aside to cool down
Heat oil in the same pot
Add leek, onion, shallots and sauté until translucent, stir in artSAVOR 21 and artSAVOR 75
Add milk, thyme, salt, bring to a simmer over medium heat, cook 6-8 minutes
Lower heat and add halibut and scallops to poach
Meanwhile, cut potatoes into slices and sauté to golden with salt and pepper
Using a hand blender, blend the fish mixture in the pan, do not over blend
Divide soup in individual bowls, add potato slices
Garnish with pomegranate, pistachios, mint and serve immediately!
