A Birthday Buffet Poolside

I never understood what is such a big fuss about having a birthday party on the actual date. Why even wait for traditional or special holidays to have a get together. Why not celebrate whenever you can! My son already had a party but not everyone was able to attend. So, I am having few small poolside parties for him to celebrate with his friends. Keeping in mind Summer Simple, this menu is designed around what the foods he loves but at the same time as easy as possible with minimal effort and last minute cooking, but yet a special treat...
