Homeira's Tart Cherry Chocolate Fudge Brownie with Caramelized Bananas

As you may have guessed, I am not a “dessert lover!” When it comes to creating sweet endings for a menu, I always try to find a quick and easy solution that says “made from scratch” but is just mostly! Everyone loves a fudgy, chocolate brownie. My version is made better with walnuts and fresh tart cherries stirred through the batter. The cherries have been cooked down with a bit of sugar and Grand Marnier. It is finished off with layer of brown sugar caramelized bananas.

MENU | Summer Simple Do Ahead
Sweet Endings, Dessert, Tart Cherrie Chocolate Fudge Brownie, Caramelized Bananas

Serves 12

INGREDIENTS

Tart Cherry Mixture
2¼C    Fresh Sour Cherries, pitted
2T        Butter
2T        Sugar
1T        Lemon Zest
2T        Lemon Juice
2T        Grand Marnier

Fudge Brownie Batter
1Box    Brownie Mix, store bought (plus egg, oil & water per box instructions)
2T        Butter, for greasing baking dish
½C      Walnuts, roughly chopped, optional

Caramelized Bananas
2          Bananas, sliced
2T        Butter
¼C       Brown Sugar
1t         Vanilla
2T        Grand Marnier 

Garnish
2T        Mint Sprigs, for plating

KITCHEN ESSENTIALS

Baking Dish  9”x13”
Sauté Pan

DIRECTIONS

STEP 1  | Tart Cherry Mixture
Heat butter in pan over medium heat
Add cherries, sauté until softened
Add lemon zest, juice, and Grand Marnier
Lower heat and simmer about 1 minute
Remove from heat and set aside 

STEP 2  |  Brownies
Preheat oven to 350˚F
Grease baking dish with butter
Prepare brownie batter according to the package instructions
Stir in chopped walnuts  (optional)
Spoon half of brownie batter into baking dish, spreading evenly
Pour cherry filling and spread evenly across brownie batter
Spoon over remaining batter
Bake 20-25 minutes until done
Toothpick tester should come out clean
Do not over bake

STEP 3  |  Caramelized Banana
Melt butter in sauté pan over medium heat
Add sugar and stir until dissolved
Add vanilla and Grand Marnier, stir to combine
Add banana to pan and cook for about 1 minute
Be careful not to overcook

STEP 4  |  Plating & Service
Spoon portion of brownie onto serving dish
Spoon caramelized bananas over brownie
Top with vanilla ice cream (optional)

Serve immediately
