Homeira's Individual Molten Chocolate Cakes

Despite not being a chocolate lover, this warm dessert really tickles my palate in all the right ways! Elegant, graceful and silky this molten chocolate cake is topped with tart strawberry and bittersweet, candied orange peel and a bit of cold vanilla ice cream. This dessert is the symphonic rhapsody to conclude my poolside dining menu. A deliciously wild and wonderful bit of flavor anarchy, you just can’t quite find the words to describe the experience. Simply put, I think you will agree, “It was all fabulous!”

MENU | Summer Simple Poolside
Sweet Endings, Dessert, Chocolate

Serves 12

INGREDIENTS

Cake Batter
1¼lb      Chocolate Chips
¾lb        Butter, 3 sticks
10          Eggs, whole
1½C       Sugar
2T          Vanilla Extract, pure
2T          Expresso Coffee
2T          Grand Marnier (or other orange liqueur)
1T          Flour, optional

Garnish
1½C       Strawberries, sliced
1C         Candied Orange Peel, (optional garnish)
              Mint sprigs, for garnish

KITCHEN ESSENTIALS

Electric Stand Mixer with the Wire Whisk Attachment
Ramekins, 4 - 5 ounce size

DIRECTIONS

STEP 1  |  Melt Chocolate
Preheat oven to 350˚F

Melt chocolate and butter together over low heat in a saucepan or over double boiler
You can do this in the microwave using short 15- 30 second intervals
Do not allow to scorch or boil as the butter and chocolate will break


STEP 2  |  Make Cake Batter
In stand mixer, beat together eggs and sugar until lemony yellow
Add in vanilla, coffee, Grand Marnier and flour and mix to combine
With mixer running on low, pour in melted chocolate mixture
Ensure all chocolate mixture and butter sugar is thoroughly combined
Do not overbeat

STEP 3  | Fill Ramekins and Bake
Lightly coat the ramekins with cooking spray
Evenly divide the batter between the ramekins
Bake in the 350˚F oven for 20 minutes
Do not over bake
Cake centers should be soft and gooey 

STEP 3  |  Plating & Service
Decorate each ramekin with strawberries, candied orange peel and mint sprigs
Serve with a small scoop of vanilla ice cream if you like.
You may just serve as they are from the oven without garnish if your prefer
