Simple Roasted Cauliflower
with Bacon & Parmesan

This dish is magical! artSAVOR 60 transforms ordinary cauliflower, with a touch of bacon, parmesan and panko bread crumbs into a sublimely delicious dish. High in protein and potassium, cauliflower shines with this simple preparation. Crunchy, nutty, meaty and delicious, this is a perfect fall and holiday side dish. You can easily omit the bacon for a completely vegetarian dish.

Serves 10 – 20

INGREDIENTS

2lb           Cauliflower, cut into steaks
3T             artSAVOR 60, already mixed with Olive oil (See Directions below)
2T             artSAVOR 75, already mixed with Olive oil (See Directions below)
2T             Olive Oil
¼C           Bacon, Cooked and Julienned
5T             Fresh parsley, Chopped
6T             Panko Crumbs
D              Sea Salt and Pepper,Freshly Ground, to taste
1T             Olive Oil, for Sautéing Parsley and Panko
2T             Parmesan Cheese, freshly grated
¼C           Pomegranate Seeds, Optional
¼C           Almond, Toasted, Optional 

PREP

Combine artSAVOR 60, artSAVOR 75 and additional olive oil
Add cauliflower and toss to coat evenly
Transfer cauliflower mixture to a baking tray
Arrange them in a single layer for even cooking
Set aside

Combine parsley, panko, salt and pepper
Sauté parsley mixture in a wok for few seconds, do not overcook, set aside

DIRECTIONS

Preheat oven to 400˚F
Transfer cauliflower to oven middle rack
Roast for 10 - 12 minutes
Remove cauliflower from oven and spread parmesan cheese evenly
Spread parsley - panko mixture and bacon evenly
Return to oven for 10 minutes or until golden brown
Remove from oven
Garnish with pomegranate seeds and almonds
Serve immediately
