Loaded Nachos

For years we ordered Nachos at restaurants and got disappointed that there was not much on it, particularly cheese. Or some would melt the cheese and pour it on the chips, which was totally unacceptable. Then came my memory of having great Nachos at one of the restaurants in Aria Hotel in Vegas, which subsequently closed and left us with great sadness.

Every bite of Nachos should have chip, cheese and everything else that is on it. It should be a total satisfaction and experience loaded with layers of flavor.

After so many disappointments, I decided to make my own, which also makes it a great substitute for Pizza when I have guests who are gluten intolerant. It is one of my name dishes and loved by whoever who has had them. Get creative with me and create your own!

artSAVOR 75 Ingredients

Dill, Parsley, Leek, Basil, Salt, Pepper, Herbs & Spices

Serves 8

INGREDIENTS

½C         Onion, chopped
1T           Olive Oil
1C          Black Bean, liquid drained
4             Italian Pork Sausages, taken out of casing
3             Ears of Corn, grilled, Kernels removed
8             Bacon Strips, roasted, julienned
6C          Corn Tortilla Chips, good quality store bought, more if desired
2C          Sharp Cheddar Cheese, shredded
2C          Monterey Jack Cheese, shredded
1C          Mozzarella Cheese, shredded
¼C          artSAVOR 75  already mixed in oil (See Mixture Directions Below)
2T           Fresh Oregano, chopped 
1C           Goat Cheese, crumbled
1C           Pickled Jalapeno, seeds removed
1C           Cilantro, chopped
1C           Micro Greens
2T           Olive Oil
               Edible Flowers, optional
               Guacamole, Optional, (store bought)

DIRECTIONS

PREP
In a medium pan, sauté  onion in oil, about 3 minutes
Add black beans and sauté for about 2 minutes,  set aside
In a medium pan, brown sausage, breaking into loose pieces, set aside

Nacho Assembly
Preheat oven to 400˚F
Arrange one layer of tortilla chips in cast iron pizza pan
Spread shredded cheese over the chips
Drizzle the artSAVOR 75  Mixture over the cheese layer
Spread chopped oregano oregano over the nachos
Evenly arrange the beans, corn, sausage and bacon
Create another layer of chips, cheese, artSAVOR mixture, oregano, beans, corn, sausage and bacon
Arrange the goat cheese crumbles
Place nachos in the oven for about 5-7 minutes, or until cheese melted
Remove from oven and garnish with the jalapeno, cilantro and micro greens
Drizzle with olive oil and arrange optional edible flowers
Serve immediately with optional guacamole on the side

For even flavor in every bite, combine one entire package of artSAVOR with ¾C Olive oil.
Store unused mixture preferably in an airtight glass container in the refrigerator for future use.
