Asparagus Corn Bisque

Finding a way to do simple soups Creamy tasting and tangy all at the same time is a joyful event. This is one that you do not have to feel guilty to enjoy it as there is no cream in it.

Dill, Parsley, Leek, Basil, Salt, Pepper, Herbs & Spices

Serves 8 – 10

INGREDIENTS

Bisque
2T Olive Oil
1C Onion, Chopped
1T Curry Powder, mild
1bu Asparagus, cut in 1 inch pieces
2 Ears of Corn, grilled and kernels removed
2C Chicken Broth, more if needed
1T artSAVOR 75, already mixed in oil (See Directions Below)
D Cayenne Pepper, to taste

Garnish
8T Strained Yogurt
5 Cherry Tomatoes, halved
D Red Chili Pepper Flakes, optional
10 Asian Chives, for decoration

DIRECTIONS

Bisque
In a medium pot, sauté onion over medium high heat until translucent Add the curry, sauté more until onion mixture is aromatic
Add asparagus and artSAVOR 75, sauté for few minutes
Add chicken broth and lower the heat
Simmer for 15 minutes until asparagus is soft
Turn heat off and let mixture cool off a bit
Using a hand blender, blend mixture into a coarse texture
Add corn and cayenne pepper
Simmer for another 10-15 minutes or until ready

SERVE

To show off the green color of this soup, pour one cup of soup in a white bowl
Top with a dollop of yogurt
Place a tomato half Sprinkle some red chili pepper for those who like it hot!
Place one sprig of chive for décor and presentation Serve immediately
