Watermelon, Persian Honeydew, Watercress & Grilled Little Gems

Watermelon salads make regular appearances on my summer menus. I grew up eating watermelon with a touch of salt and love how the natural sweetness become savory. This was the origin of my many variations on a theme of summer melon salads. I started adding a splash lemon juice, then a sprinkle of Persian goat cheese, then Persian cucumber and then . . . as you can see from this recipe is expansive, creative and deliciously fun. Naturally, I brought this combination together with my own signature flavors in a heavenly artSAVOR 75 vinaigrette.

MENU | Simple Summer Dinner
Salad, Side, Watermelon, Persian Honeydew, Strawberries, Blueberries

Serves 10

INGREDIENTS

2C           Watermelon, cubed
2C           Persian Honeydew, cubed
(substitute with regular cantaloupe or honeydew)
1C           Strawberries, sliced
1C           Blueberries
¼C          Lemon Juice, freshly squeezed
1Bunch   Watercress, root and lower part of stems removed
8            Little Gems Lettuce, halved and grilled, (see directions below)
½C         Light Vinaigrette Dressing of your choice, store bought or make your own
¼C         artSAVOR 75, mixed with olive oil, more if you desire (see directions below)
       Salt and Pepper to taste

Grill Grid

DIRECTIONS

Step 1  |  Vinaigrette
In a bowl combine your vinaigrette and artSAVOR 75
Taste and adjust seasoning with salt and pepper if needed
Set aside for flavors to develop

Step 2  |  Grilled Little Gem Lettuce
Drizzle cut sides of lettuce halves with olive oil, salt and pepper
Heat grid over grill or stove top burner
Grill each cut side for about 30 seconds until lightly charred
Do not overcook or the lettuce will become limp and lifeless
Set aside on a platter for plating 

Step 3  |  Dress Fruit
Place watermelon in a bowl and drizzle with lemon juice
Add a small amount of vinaigrette and toss to coat
Repeat the same steps separately with the honeydew, strawberries and blueberries

Step 4  | Arrange on Platter
Arrange watercress and lettuce in rows on platter
Drizzle both with the vinaigrette
Arrange the watermelon, honeydew, strawberries, and blueberries in rows
Drizzle the remainder of vinaigrette
Serve immediately

For even flavor in every bite, combine one entire package of artSAVOR 75 with ¼C olive oil.
Store unused mixture preferably in an airtight glass container in the refrigerator for future use.
