Almond Crusted Boneless Chicken Thighs

Faux-fried in the oven, these tender, juicy boneless chicken thighs coated in crunchy almonds are flavor bombs in every bite. Spicy chipotle and stone ground mustard married together with the black pepper, paprika and lime in artSAVOR 50 create an amazing and irresistible flavor. RECIPE INGREDIENTS

¼C artSAVOR 50 (mixed with olive oil according to directions below)
2 Eggs
3T Chipotle Hot Sauce
3T Stone Ground Mustard
¼C Red Wine Vinegar
2T Olive Oil
2C Almonds, Coarsely Chopped
¾C All Purpose Flour, more if needed
D Salt and Pepper
8 Boneless, Skinless Chicken Thighs
Fresh mint, chopped for garnish (optional)

DIRECTIONS

Preheat oven to 400˚ F
Add flour to a shallow plate
Lightly season chicken with salt and pepper
In a bowl, whisk together artSAVOR 50 mixture, eggs, hot sauce, mustard, vinegar and olive oil
Dredge thighs one at a time with the flour, shaking off any excess
Next, dip each thigh into the egg mixture bath coating both sides
Finally into ground almonds, generously coating all over
Press lightly with your fingers to ensure coating sticks
Place wings on the wire rack and bake for 25 minutes until cooked through
Serve immediately, garnished with fresh chopped mint

NOTES

Oven | If you have a convection setting on your oven, I highly reccommend it,
as the chicken will cook faster and be much crispier.

Chicken |
You can easily substitute boneless wings, chicken fingers or whole chicken breasts in this recipe.
Adjust the cooking time and temperature accordingly.
Chicken fingers will cook in about the same time as the boneless wings.
Chicken breasts will take longer, so bake in a 350˚F for 45 minutes or until done.

Nuts | You could easily substitute pecans or walnuts for the almonds or even a mixture of two kinds.
If you don’t care for nuts and want something lighter, use panko bread crumbs.

Store unused mixture preferably in an airtight glass container in the refrigerator for future use.
